Namako (sea cucumber)/なまこ

 

Omura Namako (sea cucumber) is a popular product from Omura Bay. The namako that inhabit the Bay are of top quality because the water is calm and the salt content is low. Namako do not need to fight against waves in Omura Bay so, the meat is tender. Low salt content gives it a less pungent taste. Namako have an interesting juxtaposing `soft and slippery, but firm and crunchy” texture. This texture is loved by some and hated by others. The taste can only be described as having a fresh ocean flavor. It is most commonly prepared raw in thin slices with a splash of soy sauce or ponzu. They are in season during the winter and were orginally fished from November through March. However, there quantity in Omura Bay has diminished, so the fishing season now ends in February. Due to their good quality, Omura Namako is a top domestic export.
